I think they randomly damage one piece of metal gear you're wearing every time they score a successful hit

They spam touch attacks that paralyze without a saving throw. Either you're immune or you're dead.

Deep Giant Elders. Anything that automatically does Acid Sheath is silly, particularly routine enemies that will never drop materials to be worth a spell-breach scroll. It's just grossly unfair. >_<;

Dark Mantles also -really- suck for plate classes, since the slow bolt was (or is?) a touch attack and if it hits ... slows you to 1 APR and half movement speed. No saving throw. It's kind of ridiculous~ and a guaranteed hazard some classes cannot realistically avoid.

At the above Rust Monster comment:
They don't 'eat' your gear. They just automatically damage any metal gear you have. Monks and casters are usually immune to this outside their helmets.

Irongron on Slithering Trackers:
I have begun learning their movements now that I have 'spot'.. and honestly, I love their design more and more now that I've mostly come to understand them. How they kinda snowball when people just run through in stealth? I wish more enemies like that existed in some zones, haha. Good design.

Any enemy that dispel more than once, it is just excessive when you head into the goblin town at level 16 and get hit with 10 dispels in the first encounter

These. ALL of the THESE! Add in that they ALSO often use death armor or acid sheath, which is just a nightmare when relying on either summons or melee combat.

Additionally: Weave Eaters. Have you ever TRIED to get a party of melees that haven't previously done a weave eater dungeon to NOT attack the floating orbs!? It's like herding cats, only the cats are stripping all of their wards off in a frantic battle charge that would make Leroy Jenkins proud

Honestly? Those things in the Ghostwood that level drain.

I know, I know. They're extremely low-level. You know what's also extremely low-level? Most of the people going through the Ghostwood. Level Drain is annoying at any level, but at level 4 it's just plain awful. And if you can't read Restoration scrolls and there happen to be no clerics on Skal with 4th circle spells at the moment, you just have to live with it.
