... What would you be?
What sort of class would they be?

For the sake of diversity in answers, we'll axe Vampires/Dhampirs(i know it's not undead i'm just including them), as well as Liches and all their variants(Baelnorn, Demilich, Arch-Lich, etc).
Try to find an actual type of undead to match your idea / concept as well. Go nuts!

Personally, I'm rather torn on a few.
Mummies are some of the most iconic undead types in media as a whole, as well as are some of the most intelligent and varied in terms of their flavour potential. Their tendency to be Tomb Guardians - which imho is one of the coolest undead classes - just makes them that much more interesting.

But if I were to be 100% real, I'd go with either a Death Knight or a Night-Rider.
Death Knights are my all time favourite type of undead because of the potential for interesting narratives that can be told with them. Whether you're a damned paladin who has been cursed for his failure, a soldier forcibly changed by his undeath obsessed leader, or something in between.
Or better yet, an EXTREMELY unfortunate individual who is doomed to eternally serve in a Lich's army, never to know the bliss of being laid to rest.

As for Night Riders - undead horsemen are simply, rad as hell. Myrkul is my favourite death god, so anything involving him immediately skyrockets in my mind.

In terms of a class, it'd have to be something related to a cavalier. I've always loved the silhouette of the headless horseman from when I was a kid, not to mention the aesthetic of the Nazgûl - so this hits the spot.
Or in the case of mummies, obviously a tomb guardian.
Please please please please read the tomb guardian section in Libris Mortis, it's so unnecessarily cool.

Angel of Decay

What could possibly be more cool than being an intelligent undead that feeds off of rot and is a horrific mockery of angels? Your sole goal for existing is to corrupt everything, command lesser undead, and look awesome while doing so. Sounds like a blast to me.

No clue what kind of class they'd be? That'd be their own thing I imagine. Probably necromancer specialist or palemaster of some kind. Entirely unfeasible to play as in a multiplayer setting, for sure, and I have no clue how you'd play one in a tabletop setting unless your partymembers were all lesser undead bound to you.

Straight up, skeletal mage. Probably an Undying pact warlock of some variety. I don't need anything fancy about it, don't need to be some absurdly high ECL undead critter, just a man cursed with life beyond death and driven to drag as many other souls down with him as he can.

I think Revenants would be nifty I suppose, though I imagine it'd be hard to RP one as they sort of exist specifically for revenge against those whom wronged them.. which means technically they don't -have- to be evil.

An Avenger Knight Style Character Revnant could be cool. Maybe a Vigilanti

Mummy cleric who was bidden to serve a god in some way that is no longer valid, and now has everlasting life but no goal, so it finds purpose somehow.

Variations include its new motivation being to destroy the living who contributed to the destruction or invalidation of its assigned task or ward, finding a new way to serve its original purpose in spirit if not in fact, or gaining some semblance of free will and figuring out what it wants to do now, since it's so wise and powerful.

I played something like this in a few pnp sessions with friends, it was fantastic fun. I ripped my name from the Berserk manga/anime, and called myself Nosferatu Zodd, a level 17 cleric (I forget what deity/background it was, might have been Velsharoon).

Alternatively, I saw someone play a wizard/palemaster that eventually worked towards becoming an actual Necropolitan once, and it seemed very cool. Necropolitans are basically the lowest burden undead PC you can use in a game, because you have virtually no special abilities or stat adjustments, you simply become a sentient undead version of yourself. As such, they can be used to allow players to pursue undeath without completely ruining the balance of a game, easier than other undead PC concepts (such as vampires or liches, or even mummies which, in 3.5e, have some pretty bonkers stat adjustments and stuff).

I think I would go for a skeleton that has somehow gained sentience and functionally permanent animation. No recollection of previous life, nor any bindings to this or that. Simply a skeleton that has to figure out what to do with the absurd situation of it's own existence.

Ghost focused on Malevolence/Possession

As far as class, whatever you possess becomes your statblock. So if you possess a bandit archer you get their stats, abilities, items, etc.

Would never happen as it would be highly exploitable for people with just a bit of creativity. Would be neat for a 1-day Halloween server event though.
