On wiki page, Jergal is one of the allowed paladin deities. Considering the undead appealing of his followers, rpwise, is alright to a mandatory lawfull good alligned paladin to summon undead, if he is able to?
Also use any necromancy spells (from scrolls, wands or multiclass)?

A paladin cannot summon or animate undead on Arelith and remain a paladin. The most they could do, is control already-existing undead, and be sure to lay them to rest afterwards. Jergal-approved undead generally are not seen in places other than his Churches for tasks that need an undead to perform, and most definitely not for adventuring or writwork.

Necromancy is fine so long as it doesn't have the Evil descriptor. Death Ward is necromancy and is in the Paladin spellbook for a reason.
Multiclass does not matter for Paladins, they are beholden to their Oath all the same. If you are a Paladin/Sorcerer and use Animate Dead from the Sorcerer spellbook you are breaking your Paladin Oaths and thus, no longer a Paladin until you atone.
To add on to the responses here, if a paladin is breaking their oath in a significant and regular manner, then they are expected to lose their paladin levels. So, it is especially important for paladins to consider their actions, as undertaking an action which causes them to lose the favor of their patron will mean they lose their paladin boons.

So everyone has already given you excellent answers on Paladin and the nuance between necromancy spells that are evil and those that are not.
I would like to inform you the nuance of Jergal. Jergal is work with Kelemvor now; whom opposes undead very strongly. Thus many churches of Jergal often cooperate with Kelemvorites in this regard. Jergal himself is kind of indifferent the way he always has been when he gave his power away lol (he use to be a big deal). So yes some followers will have limited use of undead, or even go on the deep end; but you are not those followers. You are a paladin and Jergal does not say 'use undead' to you. He just grants you powers because you happen to align with his goals (speaker/scribe for the dead, subservient to Kelemvor etc) and probably bring worship to him as your deeds attract good attention. I have always said you are a paladin first, and a devoted follower of your god 2nd (even though that part is connected to being a paladin).
