I tend to treat offline as the time he's actually sleeping, instead of just taking short naps or keeping himself going with restoration spells.

Gotriik keeps Brogendensteins border safe from the Orcs, Duergars and Orogs from Umbrick / Path of Rhun. Considering he is of Haela and prefer to live outside the city where he can for fill his call. It also makes a bit sense that in the fact I rarely can come online everyday, so being away from longer time with filled kegs, and food from a fellow dwarf everytime he depart, makes it seem more realistic. Even build him a small home up there

I tend to also RP that emphasis deeply when ever I depart or return, makes him feel like he is present, even though I am offline... Or a "reason" that if Brogendenstein suddenly is attacked or Brogendenstein going to war, that this war hungry fellow is already doing important battle somewhere. Also gained a very idiotic habit of HAVING the need to log out leaving the Northern gate... Every... freaking... time
Veigal is walking somewhere in the planes searching for something secret secret... (currently semi shelved until a certain plotline begins again)

Farming, Paperwork, occasionally hunting, Writing and reading letters from her kids. More paperwork and drinking too much wine.

She drinks, reads, reveries and reads some more. Spends some time cataloguing the insanely long list of books she needs to get on top of, fussing with her dog and then drinks. Again. She probably bosses the (behind the scenes) servants around and then drinks some more. The rest of her time is spent lounging around and enjoying the solitude and peace of her home.

Gwen most definitely the majority of her time taking care of matters that aren't particularly interesting for roleplay. Making sure clothes are properly hemmed, equipment is in working order, crying over making more spell components, purchasing food outside of trail rations.
Also making sure those she cares about actually take time to eat, sleep and bathe. No, one-hour catnaps and coffee do not count as actual sleep.

Depends how long, if I'm away for more than a week then Olwin either went Planeswalking or back to Faerun proper for some antics and then comes back when he's caused too much trouble and needs to lie low in the boonies of Arelith.
If it's just a day or too, sitting in pubs, racking up more and more astronomic debt and getting into embarassing situations. I mean... he was on the receiving end of a furious beatdown from a birdman in the street today and that was all while online, dread to think what happens off camera.
