Rationale: Per lore, cooshee are usually kept by elves as guard dogs or hunting dogs, which more closely resembles the role of a ranger's companion compared to the mage's familiar.
I propose this would work the same way half-elven wizards, sorcerers, hexblades, and warlocks can choose to have cooshee familiars - a purely cosmetic choice applied through console commands and a pop-up. I believe wolves and dire wolves would be reasonable base options to allow to reskin as cooshee, perhaps also panthers.
Edit: upon reflection, I realize this basically boils down to "Remove totem ranger as a path, make companion selection work the same way that familiar selection does." A more dramatic component, but I'd imagine since it was possible to turn all trueflames into elementalists in an automated way, it'd be possible to turn all totem rangers to non-totem rangers and them have them use the command-based system to select their companion skin.
Allow elven and half-elven rangers to reskin at least some companions to cooshee

It should be possible to adapt the existing familiar reskin framework for animal companions, but it's a bigger project.
Ideally, we'd combine the totem ranger system with the new one and add the totem appearance as a selectable skin option for eligible characters.
In any case, approved!
